Aloha Vernon.
Just listened to the show. Gotta agree with you on the protests.. Is there an inter-island rivalry?? News to me.
Thanks again,
-Jordon

@Jordon – Yes, the whole situation is very strange. Once again I totally understand the feelings of the outer islands. I too enjoy the fact that they are less crowded and provide a wonderful getaway from busy Oahu life. I think it’s just the method of protest that has me mostly troubled. I’m all for free speech and PEACEFUL protest.

That sounds good Vernon, have you made it? What kind of Coconut milk? The canned stuff? Actual water from Coconuts?
I like all things Coconut so i’d like to try making this. I cool alot and have experimented making Hawaiian food before, Lunch plates, Spam Masubi, ect.

@Jordon – Canned coconut milk would work, but of course getting it fresh from a coconut would be so much better. I personally have not made it, but tasted it from some friends and it is so ono!
Also McDonald’s Hawaii has once again brought back the Haupia Pie on their menu. Here’s an article link talking about it’s introduction earlier this year. http://tastyisland.wordpress.com/2007/03/14/mcdonalds-haupia-taro-pie/

…I make my haupia with canned coconut milk.
1 can 14oz coconut milk
1 cup water
1/2 cup sugar
1/4 cup corn starch
Wisk all together thoroughly before placing on the stove, then cook on
medium heat until mixture thickens and appears glassy.
As a topping, you can buy some shredded coconut and toast in a moderate oven – it browns fast, so take the pan out of the oven as it’s just turning color (maybe 5 minutes) and then get the cocunut out on the hot pan so it doesn’t continue to toast.

Gotta say, that was fantastic. Real easy to make, substituted 1/2 cup of water with Milk though.
Very very good stuff.
Thanks for the recipies! Vernon and JFSD
