Haupia Hawaiian Coconut Pudding
Here’s a wonderful recipe for Haupia Hawaiian Coconut Pudding that JFSD posted in response to our show 808T E.121 – Kauai Coconut Festival. Mahalo JFSD!
I make my haupia with canned coconut milk.
1 can 14oz coconut milk
1 cup water
1/2 cup sugar
1/4 cup corn starch
Wisk all together thoroughly before placing on the stove, then cook on medium heat until mixture thickens and appears glassy.
As a topping, you can buy some shredded coconut and toast in a moderate oven – it browns fast, so take the pan out of the oven as it’s just turning color (maybe 5 minutes) and then get the coconut out of the hot pan so it doesn’t continue to toast.
